If you clocked the Hog Roast Bishop Sutton van rolling through town earlier this month and wonder what our team were up to – well, now you get to find out.
We’d been brought in to cater a business friends and family social event for 100 guests, which meant an early start, a full schedule and our catering manager Alistair very much in his element.
He arrived on-site well ahead of serving time – because when you’re slow-roasting a whole hog, you don’t cut it fine. The process started with the pig: scoring the skin, dousing it with water, then working salt into every single crevice. That last bit isn’t just for show – it’s the reason our crackling comes out the way it does. Shattering, golden, completely addictive. After that, it was simply a case of letting time and a low flame do what they do best.
While the hog got on with doing its thing, Alistair got on with the sides. Sage and onion stuffing, homemade applesauce, a fresh tomato and mozzarella salad, mixed salad, coleslaw and herby new potatoes – the kind of spread that makes any plate look full in the best possible way. Each element there for a reason, nothing randomly thrown together.
For the veggie and vegan guests, Hog Roast Bishop Sutton pulled together BBQ jackfruit sliders with a plant-based slaw that honestly didn’t feel like a consolation prize in the slightest. Rich, smoky, satisfying – you bet they went down just as well as everything else on the table.
By the time guests were mingling and catching up, the food was ready to tie the whole afternoon together. And that’s really what a spread like this is built for – not to steal the attention away from the celebrations, but to give people something to gather around. An excuse to slow down, fill a plate and actually talk to each other.
