Sure, our job is to follow the brief of the client that has hired us, but come the day of an event following that brief typically boils down to ensuring the satisfaction of each and every guest.
It is our job to create an experience for all. That is what catering is. We wouldn’t be here some thirty years on from our very first job as a caterer if we had just ignored that wants and needs of our guests from day one. We swapped out a dish for one guest at their request to be a shredded beef in bourbon sauce option. This came massively appreciated by not only the guest, but also the client overall and added to the glowing response they returned to us with. For us it is only a small accommodation to make one guest happy, but that creates an immeasurable experience for that guest and client in return that improves the overall product.
